摘要

A model is described for assessing lipase-catalysed hydrolysis of ester bonds in triglycerides and for identifying the relative substrate specificity of lipases when used in multisubstrate systems. Utility of the model was tested using experimental and literature data. The model showed a good fit to most reaction profiles, and relative specificities could be deduced for most reactions. Potential applications and limitations are discussed.
